raw beets with horseradish - (nr)

Serves 4 as a side dish
- 1 or 2 bunches of small raw beets, greens removed and peeled (a mixture of red and yellow beets is nice)
- fresh or jarred horseradish
- juice of 2 lemons
- rock salt
Slice the beets as thin as you can get them, preferably in 1 to 2 mm slices. A cheese slicer might help.
Mix the beets with the lemon juice and refrigerate a few hours (or overnight). The acidity of the lemons will 'cook' the beets.
Sprinkle on horseradish and rock salt.
Great with barbecues!
