Granola
I’ve been making this really yummy and easy granola lately. Eden and Honor are addicted and are always asking for “Bamilla.” I thought I’d share the recipe.
2 cups rolled oats
1/2 cup flaked coconut
1 cup sliced almonds
1/3 cup oil
1/2 cup honey
1 cup raisins*
1. Preheat oven to 300º. In a small sauce pan, combine honey and oil and cook over medium heat just until honey melts and can be easily combined with the oil. Set aside.
2. In a large bowl, combine oats, coconut and almonds. Pour honey mixture over oat mixture and stir well, making sure to evenly coat the dry ingredients. Spread evenly on a rimmed baking sheet and bake for 30 to 35 minutes or until granola is a golden brown color. Stir after 20 minutes of baking.
3. Remove from oven, stir in raisins and spread out on a parchment lined counter top. When granola is completely cool, break up and store in an airtight container.
Serve with milk or yogurt.
*You can use any combination of nuts and dried fruits.

this sounds delish!!! thanks for sharing. i can’t wait to make some. may give a whirl tonight. you know i am completely addicted to the fruit salad with coconut :)

ooh sounds yummy, my hubs LOVES granola. I can’t wait to get baking!
Oh and to sarahgrace, have you tried Kashi mighty bites cereal? All the taste, half the sugar and fat, LOTs of whole grains, my kids love it!

I just made a batch of granola tonight, too!
2 cups oats
1 cup sunflower seeds
1/2 cup flax meal
1 cup coconut
1 cup oat bran
1 cup wheat germ
1 cup rice crispies
mix it with 1/2 c honey or maple syrup and 1/2 c oil and bake like you do yours. I stir fruit and nuts in after. It makes A LOT and will last our family about a week stored in a tupperware container. I can’t wait to try yours!

hooray! i will make some tomorrow with cranberries for my hub, we were both looking at the kellogs cran vanilla crunch at the store tonight, but we love granola and i have all the ingredients here. thanks for sharing!

Mmmm, that sounds good! Thanks for sharing. I’m always looking for good stuff to feed the kids, and this sounds like it would be great mixed with some vanilla yogurt! :D
